“It’s no secret that we’re big fans of gin here at Discover Delicious, and are also driven by our passion to unearth the passionate Welsh producers creating some truly exceptional food and drink. Jess and Lew are the epitome of what we’re all about, lovingly producing their unique craft gin from their beautiful cottage in Snowdonia; a craft gin with a genuine sense of place. Dinorwig Distillery was established by husband and wife team, Lew and Jess, from their former quarry workers cottage located beneath the slate quarry of Dinorwig, looking out towards Snowdon.
“We love exploring the mountains and slate quarries in this area, it’s is a place of amazing contrast and brutal beauty. In 2016, we set up a micro gin distillery from home, we wanted to create gin that we felt was authentic to the land and so we set the principle that we would only use botanicals that could be grown in this region. Many of the fresh botanicals we use are harvested from our mountainside garden and the water we use comes from our mountain well, filtered through layers of slate.
“We craft our gin to our own unique recipes in our mountainside distillery. Each tiny batch is started with a slow infusion of sustainably sourced botanicals in a quality neutral grain spirit. While most gin makers use either pot distillation or vapour infusion, we use a combination of the two methods working with a 50 litre still. Our process is very labour intensive with extremely limited production. We use only the very heart of the distillation run and each run produces just enough gin for 65 standard size bottles. Cut to drinking strength with our own, fresh mountain well water, our gin is then bottled, sealed and labelled on-site, by hand.
We set out to create a gin made with exclusively local ingredients but discovered that juniper is in rapid decline in Wales and across the UK. Rather than contribute to the problem by applying for a licence to pick endangered juniper berries from the hillside, we decided to buy in juniper from a trusted UK supplier. We chose Macedonian juniper for its rich aroma and depth of flavour.
We now grow juniper in the distillery garden and support the conservation of juniper in the UK by donating from sales of gin to Plantlife, a British conservation charity working to save threatened plant species.
We also are Business Members of the Snowdonia Society which works to protect the landscape of the national park, conserve diverse wildlife and support the area’s unique cultural heritage.
