Here at Wilderness Brewery, we make a range of farmhouse style beers from our little site in Newtown, Mid Wales. We adapt the beers that we brew according to the seasons. Beers are either released fresh, or aged and soured in the brewery’s barrel store.
The majority of our beers are aged for 9 – 18 months with a range of different wild yeast and bacteria, allowing them to naturally develop earthy, funky flavours, pick up character from the oak barrels, and gain a little acidity.
We’re a small, family run brewery based in Mid Wales, producing modern farmhouse beers. All of our beers are fairly simple, unfiltered and vegan friendly.
For us success is founded on our happiness with the quality of the products that leave the building, and on seeing people enjoying our beers – going forwards we are excited to expand the range of barrel-aged beers that we produce, and, in particular, we are looking forward to being able to incorporate more foraged botanicals and fruits into our ageing process in the next few years.
