Astypalaia is sparsely inhabited and the interior is dominated by towering limestone cliffs and rocky ravines. Clinging to ledges, thorn bushes, dwarf juniper, island mountain sage and island mountain thyme plants manage to survive the dry summer heat.
The bees visit the beautiful purple flowers of the wild thyme throughout June and July and produce this raw, unfiltered, thick mono floral honey. It is a fragrant honey with a delicious, distinct and unique taste of wild thyme.
