Cheese on Toast with a Twist from The Pembrokeshire Beach Food Company

Another Beach Food take on a classic Welsh recipe – this scrumptious dish is best served with a drink in hand and devoured al fresco. Make the most of this glorious Welsh weather by avoiding time in a stuffy kitchen and trying this quick and easy recipe.

Ingredients
- 25g Butter
- 25g flour
- 1 pint of milk
- 1 bay leaf
- Dash of Worcestershire Sauce
- Pinch of nutmeg
- 1tsp of mustard
- Pinch of white pepper
- 50g grated mature cheddar cheese
- Sprinkle of smoked paprika
- 4 slices of bread or 2 rolls
- 1tsp of mermaid confetti
Method
Melt the butter in a saucepan.
Stir in the flour and cook for 1-2mins
Gradually add the milk while continuously stirring to ensure you get a lovely smooth consistency
Add the bay leaf, Worcestershire sauce, nutmeg, mustard, white pepper and Mermaid Confetti
Simmer gently for around 5mins and season to taste
While the sauce is simmering, toast your bread or rolls and put to the side once golden brown
Stir in the cheese and allow to melt. Don’t re-boil the sauce or it will become stringy
Once the sauce is looking lovely, pour onto the bread. Add some more grated cheese (you can never have enough) and sprinkle some paprika over the top. Place under the grill until you have a golden finish
