Spiced Blackberry Southside Fizz Cocktail

Ingredients
- 50ml In the Welsh Wind Signature Style Gin
- 25ml Fresh Lemon Juice
- 12.5ml Simple Syrup
- 2 Dashes Ginger Bitters
- 8 Mint Leaves
- 2 Blackberries
- Top with Tonic
- Blackberry and Mint to Garnish
Method
First, add the blackberries to a shaker and muddle to release the juice. Add the gin, lemon juice, simple syrup, bitters, mint and ice then shake to combine the flavours.
Double strain into a rocks glass over ice (one large cube works well as it won’t dilute the flavours as much as crushed ice). Top up the glass with a good-quality tonic and garnish with two blackberries and a small sprig of mint.
For that fresh, mint flavour to really sing, give the leaves a playful slap between your palms before adding to the glass. Enjoy!
*A simple syrup is as easy as it sounds, stores for around a month in the fridge and is well worth making at home if you’re planning on enjoying a few cocktails over a short period of time. Recipes vary but you can either go for a 1:1 ratio of sugar to water or a 2:1 ratio if you want a slightly thicker syrup. All you need to do is add the ingredients to a saucepan, warm gently (without boiling) and stir occasionally until the sugar has dissolved. Once it’s had time to cool, just add to your cocktails and store what’s left in an airtight bottle.
